Dark Desires Mocha Cake with Strawberries

Today is my husband Ricks birthday and most of the time I bake his cakes for him.  I generally ask him what type of cake he'd like and the response is almost always....chocolate, anything chocolate.  My husband is the biggest choco-holic on the planet.  Okay, maybe not the planet but at least in our family he is.  I have added this cake into my home baking business The Blissful Cookie and am making it available to you.

Dark Desires Mocha Cake TM The Blissful Cookie (with Strawberries)

Ingredients

  • 1 Box Duncan Hines Devils Food Cake Mix
  • 6 tablespoons of Swiss Mocha Coffee Mix
  • 3  tablespoons whipped cream cheese
  •  2 tablespoons of mayo
  •  1 cup water
  •  1/3 cup milk
  •  1/2 cup vegetable oil
  •  3 large eggs
  • 1/2 cup semi sweet chocolate chips 
  • 5 large whole fresh strawberries for garnish on top of cake dipped in melted chocolate (you can use Smucker's Magic Shell to dip them in)

Filling:

1 large can of strawberry pie filling

Directions

  • Preheat oven to 325 degrees and spray two 9 inch round cake pans with non-stick baking spray such as Bakers Joy
  • In stand mixer add cake mix, swiss mocha, cream cheese, mayo, water, milk oil and eggs
  • Blend on low for 30 seconds then mix on medium speed for two minutes
  • Turn off mixer and fold in semi sweet chocolate
  • Pour evenly into pans
  • Bake 35-38 minutes or until toothpick inserted down center of cake comes clean
Take cakes out of oven and let cool in pans for about 10 minutes then loosen edges with a butter knife (cakes should come right out) and turn them out onto a wire rack to finish cooling.  Cakes must be cool/cold to touch before you start working with them.




Once cooled place one layer of your cake onto your decorating turn table, plate, cake stand etc...and pipe a ring of frosting around the top layer in a circle


  • Add your pie filling to the center of the cake and gently spread out toward the edges of frosting ring.  Place second layer of the cake on top of strawberry layer.  Frost your cake.  You can use your favorite pre-made chocolate fudge frosting or you can make your own homemade.
Dark Desires Chocolate Frosting

1/2 cup (1 stick) butter
2/3 cup Dark Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon pure vanilla

Melt butter, Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

Take your 5 strawberries dip them in your magic shell chocolate and place on top of your finished cake.
