EASY Homemade Caramel Dip



I belong to this canning group and on there I seen something about caramel dip made in your crockpot! How easy is that?

It's easy as 1, 2, 3!

1. Fill up your crockpot and add a can of sweetened condensed milk (the whole can)
2. Turn your crockpot on high for 4 hours
3. Let the can cool completely before opening

And enjoy!

School, Summer, and Life.........

     For my daughter school for the year will be done June 1st. I can't wait to sleep in, not worry about lunch money, or clean school clothes! Or should I say what she picked out matches? She is finishing up kindergarten, next on to 1st grade. She has had a awesome teacher this year who has worked with us on things happening.
 
    Summer is almost upon us, now to find cheap and reasonable things to do while she's out of school for the summer. We are working on getting our garden put in. Will be glad when its all done and stuff starts coming up, and we can eat the fruit of our labor.

      What are your summer plans? Anything fun happening? Vacations planned? Or are you just staying home for the summer? We are already hitting 80's in early May here, hoping its a good year for my garden but not too hot.

Holiday Traditions





What is your holiday traditions? We normally go somewhere for Christmas Dinner, but this year decided we are doing dinner at our house. Do you go to family's house? Or skip the cooking and the family and go out to eat?

Our Adopted Soilder


Last night my family adopted a solider through Soliders' Angels this is something new for us, and when I told my husband he thought it was a great idea. My daughter Sage drew a picture and today I gathered up stuff for our first care package. The last few months I have been slacking off on stockpiling but still have quite the stash as for Christmas I just make my family a package of items they can use.

This package I included toothpaste, toothbrush, floss, razor, shower gel (taped shut and in a baggie) single serve wyler's pink lemonade and raspberry drink mixes, oatmeal, tuna and hot chocolate. They have a list that you can print with things most requested.

Soliders' Angels asks that you send a care package once a month, they have premade ones you can buy and write a letter once a week. USPS has flat rate packaging that you can order for free!

Leaves Finally Falling



Fall finally is in the air here in Montana! November 3nd and we haven't had more than a few flakes here and there of snow. This year is so unusual for us! Normally by now we have had one good snow fall if not more. In the last few weeks our leaves have finally started falling off the trees, and the last few days most grees only have a few left on them. They are saying snow by Saturday though. How's your weather been this year? Is it normal or did it get colder faster this year? I know for one I'm not quite ready for winter!

Spiced Pumpkin Fudge




3/4 cup butter
3 cups sugar
2/3 cup evaporated milk
1/2 cup canned pumpkin
1
tablespoon
 pumpkin pie spice
2 cups butterscotch
baking
 chips
1 (7 ounce) jar Marshmallow Creme
1 cup chopped toasted almonds or desired nuts
1 tablespoon vanilla extract

In heavy saucepan, combine first 5 ingredients; bring to boil over medium heat, stirring constantly. Continue boiling until mixture reaches 234 degrees
F on candy thermometer.

Remove from heat; stir in butter scotch chips and marshmallow cream until melted and smooth. Stir in nuts and vanilla extract. Pour into buttered 9 x 13
or larger
pan.
cool completely, cut into squares.

Makes about 3 pounds candy.  Enjoy.

Nutella Truffles


INGREDIENTS:
1/2 cup heavy cream 
2 Tablespoons unsalted butter 
1 teaspoon light corn syrup 
9 oz. chopped, semi-sweet chocolate 
2 Tablespoons Nutella



FOR THE COATING:
6 oz. chocolate 
5-1/2 oz. skinned & toasted hazelnuts, finely chopped



1. Mix the cream, butter and corn syrup together in a saucepan. Place over medium heat and bring to a full boil. Turn off heat.
2. Add 9 ounces of the chopped chocolate, and gently swirl the pan. Do not stir. Allow to rest for 5 minutes.

3. After 5 minutes, add the nutella and whisk slowly to combine.

4. Transfer the mixture to a bowl and refrigerate for 45 minutes, stirring every 15 minutes. In the meantime, line baking sheets with parchment paper.

5. After 45 minutes, the mixture will start to thicken quickly, keep refrigerated another 11 to 15 minutes, stirring every 5 minutes.

5. Using a mini ice cream scoop or two spoons, form the mixture into 1-inch balls and and place on the prepared sheets.

6. Chill until firm, about 10-15 minutes. While the balls are chilling, melt the remaining 6 ounces of chocolate. After it is completely melted, allow to cool slightly before continuing.

7. Place chopped hazelnuts in a small bowl. Remove the balls from the refrigerator. Using one hand, dip the balls into the melted chocolate. Roll it around in your hand, allow the excess to drip back into the bowl. Place the truffle in the chopped hazelnuts. With your clean hand, cover the truffle with the nuts.

8. Lift it out and place on the baking sheet. Repeat with the remaining truffles. Place back in the refrigerator for 5-8 minutes to set.
